Chocolate Zucchini Cake

Margaret Pittaway, RWNZ National Councillor, Otago/Southland

 

Ingredients:

2 tbsp melted butter

5 tbsp cocoa

2 eggs

1 1/2 cups sugar

3/4 cup vegetable oil

1 1/2 grated zucchini

1 1/2 cups flour

3/4 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

 

Directions:

Preheat oven to 180 C. Grease and line a 21 cm square tin.

Melt butter and cocoa. Beat eggs and sugar, then add oil. Add zucchini, then chocolate mix. Mix in sifted dry ingredients.

Bake for half an hour. Freezes well.
